This is a simple and beautiful recipe for a cake that you can make using any kind of seasonal fruit. It has a light texture and is a great addition to family mealtimes and is a hit with kids especially. Chef Jacqueline has made it with plums and apples but feel free to experiment with whatever  fruit you have.

Cake:      

2 eggs

¾ C caster sugar

125g softened butter

1 ½ C self-raising flour

2 Tbsp custard powder

½ c milk

Pinch of salt

Seasonal fruit, I have used cooked plums and apple

 

Topping:     

1/2 c flour

1/2 C brown sugar

1/4 C desiccated Coconut

75g cold butter, cubed

Method:

For the topping, combine and mix all ingredients until it looks like breadcrumbs, and set aside.

Beat eggs and sugar till light and fluffy, add softened butter and beat a further two minutes.

Add sifted self-raising flour, custard powder, salt, and milk.

Mix till combined.

Pour cake mix into 26cm round lined cake tin and spread evenly. Scatter your fruit of choice on top, then cover the fruit with the topping.

Bake 170 Fan bake 30-40 mins.

Enjoy a slice of cake when cool, served with a generous dollop of freshly whipped cream or warm custard.
